Happy Gut Chicken Broth

If you only have one recipe in your repertoire, make it this one! Happy gut chicken broth is not only jam packed with gut nourishing and immune boosting properties, it makes the basis of many dishes.

INGREDIENTS

whole chicken | 1
OR
chicken pieces and/or carcass | 2kg filtered water | 3-4 L

Optional: chicken feet

apple cider vinegar | 2 tbs
large onion | 1, roughly chopped
carrots | 2, roughly chopped
celery | 3 sticks, roughly chopped
including leaves

MAKE

1 place chicken into a large, heavy-based stock pot, cover with filtered water and add apple cider vinegar. Allow to sit for 30 minutes.

2 cover, reduce heat and simmer for approx. 2 hours (For slow cooker, cook for 3-4 hours on high, then remove meat from bones.)

3 remove meat from bones and place in fridge to use for other meals.

4 return bones to pot or slow cooker, and continue to cook for another 10- 22 hours.

5 once cooled, strain broth, discard bones and vegetables, and pour into jars/containers

6 store broth in the fridge for up to a week, or freeze for up to 6 months. (Be sure to leave about 2.5cm of space at the top of the jar/container as liquids expand when freezing.)

TIP: The addition chicken feet to the pot will make for an even more gelatinous broth

NOTES

Chicken broth is rich in mineral, gut healing properties and immune boosting nutrients. It contains calcium, magnesium and phosphor. As you slowly cook the bones you'll notice they get all weak and crumbly… That's because all those amazing bone-building minerals are getting absorbed into the fluid.
Use this broth as the base for you soups and stews or enjoy a a nourishing warm drink (add a rich of salt and a squeeze of lemon and fresh herbs for extra nourishment and flavour).
