Healthy Swap: Veggie Gems







This will make a big batch to have some now and refrigerate/freeze for later.


3 M-L potatoes, peeled

1 zucchini grated

1 small broccoli head finely chopped (I put mine through the food processor)

Coconut oil

Salt (I used Himalayan pink salt)


1. Bring a large pot of water to the boil

2. Preheat oven to 200c

3. Put whole potatoes in the boiling water and cook until tender (about 20 mins)

4. Allow potatoes to cool slightly

5. Meanwhile, add a little salt to the zucchini and squeeze out excess liquid

6. Grate the cooled potatoes

7. Mix all vegetables in a large bowl (season with salt if desired)

8. Roll into tablespoon sized oval shapes and place in a lined baking tray /react-text Drizzle or spray lightly with coconut oil

9. Bake until crispy and golden (about 15 mins on each side)
