Sweet Onion Meatballs

Perfectly sweet and tender, these little meatballs are so versatile and can be made ahead. The inclusion of cooked onion gives them a prebiotic advantage too.


butter | 65g
onion | 1 very finely chopped
dried oregano | 1⁄2 teaspoon
dried basil | 1⁄2 teaspoon
dried marjoram | 1⁄2 teaspoon
natural salt | a pinch
minced beef | 400g
egg yolks | 2
olive oil | 3 tablespoons


1 melt half the butter in a fry pan over a low heat, add onion and cook, stirring for 5 minutes or until transparent.
2 transfer the onion to a bowl, add mince and egg yolk. Mix well with hands. Shape into 12 balls 3 heat olive oil and remaining butter in the same pan over a medium heat and the meatballs to cook, turning frequently for 15 minutes, until golden brown
4 serve with homemade ketchup and steamed veggies
