CHOCO-GRANOLA

When I was a little girl I remember really looking forward to weekend mornings as we would often be allowed to have a certain chocolate flavoured cereal for breakfast. I would devour the cereal and slurp up the chocolatey milky goodness that remained in the bowl. Many years later, I recognise that this is probably not the best start to the day for growing bodies (or busy Mamas), so I wanted to create a way for my family to experience the same enjoyment of a breakfast treat that is actually nourishing. Also, there’s nothing like a little chocolate motivation to get the kids dressed and ready for breakfast in a timely manner. Cue my choco-granola; It’s just like a chocolate milkshake… only crunchy (and nourishing)! INGREDIENTS 1 cup puffed brown rice 1 cup rolled oats ½ cup sunflower seeds ½ cup of buckwheat groats ½ cup roughly chopped pecans ½ cup roughly chopped almonds 1 tablespoon raw cacao 1 teaspoon cinnamon ¼ cup coconut oil ¼ cup honey (or maple syrup if vegan) ½ teaspoon of vanilla bean paste OR ½ a vanilla bean pod pinch of salt 1 cup of coconut flakes METHOD Preheat your oven to 120 degrees Celsius. In a large mixing bowl, combine all puffed rice, rolled oats, sunflower seeds, buckwheat, pecans, almonds, cacao and cinnamon with a wooden spoon. In a small saucepan, combine coconut oil, honey and vanilla. Whisk gently over a low heat to melt and combine- do not boil. Once the wet mixture is melted and combined, pour over the combined dry ingredients and stir to combine well. Spread the mixture evenly over a lined baking tray (or two) and sprinkle with a pinch of salt. Place trays in preheated oven and bake for around 30 minutes, turning the mixture at about the 10 minute mark. (N.B. I have found that cooking time for granola can really vary between ovens, do keep an eye on your mixture and adjust cooking time accordingly). The mixture may still seem a little wet when done, but it should dry more when cooled. Remove tray from the oven and allow the granola to cool completely before mixing with the coconut flakes and then transferring to an air tight container. Store for up to two weeks (but it will probably be all gone by then!) Serve with a splash of your favourite cold milk or yoghurt.
