Lamb & Vegetable Casserole

Ingredients 1tsp coconut oil ¼ Leek finely chopped 250g Lamb mince 2 cups Cauliflower roughly chopped 1 cup pumpkin roughly chopped Filtered water Directions In a frypan heat the oil and add the leek until soft Add the mince, cook through and set aside Meanwhile, steam the remaining vegetables until soft (about 15-20 mins) Combine all cooked ingredients and blend until desired consistency is achieved (add water if needed) Enjoy x
