Lamb & Vegetable Casserole


1tsp coconut oil

¼ Leek finely chopped

250g Lamb mince

2 cups Cauliflower roughly chopped

1 cup pumpkin roughly chopped

Filtered water


  1. In a frypan heat the oil and add the leek until soft

  2. Add the mince, cook through and set aside

  3. Meanwhile, steam the remaining vegetables until soft (about 15-20 mins)

  4. Combine all cooked ingredients and blend until desired consistency is achieved (add water if needed)
